Description: A large, fast-growing leafy perennial shrub that is believed to have originated in the Yucatán Peninsula of Mexico. Chaya is not related to European spinach, but its leaves can be eaten like spinach. It is a popular leaf vegetable in Mexican and Central American cuisines. Plant can grow to 15 feet or be kept pruned into small bush.  Extremely fast growth given ample fertility and water, but can survive on rain water and little fertility for years.  An extremely low-care and forgiving food plant, much like our Thornless Nopal. Leaves contain a low-level toxin that is removed when cooked; cook leaves for at least 5 minutes to make edible.  Can be fed to chickens raw.
